First thing to note: following does not really imply anything, particularly if you 2 aren't "friends." It simply suggests that your posts marked PUBLIC will certainly show up in their timeline. Immaterial (you noted it PUBLIC, right?).
Second, if you would like to know that is ACTUALLY following you:
1. Go to your friends list
2. Hit the "MORE" button on the right
3. after that hit "Following".
If you don't like what you see because list, you can click the "Manage" pencil symbol and after that the "Edit Privacy" switch in the top right (see display shot above).
Note: If you let people that aren't your close friends follow you, individuals that send out friend requests that you ignore or remove will automatically start following you. If you don't desire somebody to follow you, you can obstruct them at any moment.
